SRI LANKAN PRAWN CURRY


Cooking time : 20 Minutes
 

Ingredients :
Prawns 750g, jumbo (we got ours from FRESHPICK),
Onion 1, medium, finely chopped,
Garlic 3 cloves, finely chopped,
Ginger 1 tsp, freshly grated,
Cinnamon 1 small quill,
Fenugreek seeds 1/4 tsp,
Curry Leaves 3-4,
Lemongrass 1 stalk, bruised,
Pandan Leaf 1, torn up,
Kokam 1,
Turmeric 1/2 tsp, ground,
Chilli Powder 1 1/2 tsp,
Coconut Milk   2 cups,
Lemon Juice  a good squeeze, to finish,
 

Directions :
  • Wash prawns and remove heads but leave shells. Put all ingredients, except lemon juice, into a saucepan and slowly bring up to a simmer.
  • Simmer uncovered for 8-10 minutes or until the prawns are cooked through and the onions are soft.
  • Remove from the heat, and serve along with steamed rice and a good squeeze of lemon
